The dough, through a slow maturation process, acquires exceptional elasticity, while its high moisture content makes it fluffy and soft. Before baking, extra virgin olive oil is added, and the dough is pressed with fingers,
creating the characteristic “holes” that retain the oil and enhance the flavor.
